Oh Sure! I absolutely LOVE this soup...I got it on the "old" green boards actually! Let me see if I can find the link so I know who to give credit to. If not, I'll type the recipe from memory. It's my favorite recipe I've gotten from the boards.

Here it is:

Here's the recipe: (Credit goes to Kelly-Girl)
Country Chicken Chowder
2 tbsp. Butter
1 ½ pounds chicken cut into chunks
2 small onions
chopped 2 ribs celery
sliced 2 small carrots
2 cups frozen corn
2 cans cream of potato soup
1 ½ cups chicken broth
½ cup half and half

Brown chicken in butter. Add all ingredients except half and half and cook on low for 6 hours. Stir in half and half and let stand 10 minutes.

My Notes:
I don't follow the measurements...I just throw in a bag of frozen corn & cut up 3 or 4 stalks of celery. I also use matchstick carrots because I'm lazy and hate chopping carrots. I shred my chicken instead of cutting into chunks. Make sure you wait til you're ready to serve it before adding in the half & half. I also ALWAYS add grated cheese to mine when serving. YUM YUM. I think I'll go have some now for breakfast.

Also, I've been meaning to try it using real potatoes somehow (instead of Cambell's Pot Soup) but I'm too chicken. The thought of using canned potatoes has always grossed me out, but I'm afraid of venturing out.

That sounds really good. I recently made a Chicken and mushroom chowder that had rice. It had milk added to the chowder but I had wished it was creamier. I bet the potato soup was a nice touch.

Oooh that sounds yummy and easy. I love to make homemade potato soup... I bet it would easy to add some cooked chicken and corn to make a version of this.

Shea, do you have a recipe for potato soup? That would be really easy to do as a sub for the canned potato soup.

I have canned potatoes, never buy canned potato soup.

I will make my own potato soup.
from the chowder recipe site: http://www.chowderrecipes.net/Recipes/CrockpotCountryChickenChowder.htm

Cooking Tip
Cream of Potato Soup

Add 1 teaspoon vegetable oil to saucepan. Saute 1 chopped medium onion, 1 chopped stalk celery, 2 tablespoons salt, 1 tablespoon parsley flakes, until tender. Add 4 diced medium potatoes, and 2 cups water or chicken broth. Stir occasionally until potatoes are tender. Add water if necessary. In small bowl, stir 2 tablespoons flour into 1/2 pint sour cream. Blend and stir into potato soup. Stir constantly until thickened. Add ½ stick of butter. Bring to boil and serve.

Thanks for sharing Shea!

My guess is you could use milk and you'd be fine.

I've used milk. It's not as good, but it works. I almost always have every ingredient stockpiled but the half & half! I've also used heavy whipping cream...I

I actually don't add the half & half at all into the crockpot. I add it individually to each bowl/cup of soup. I just ate a bowl of the chowder myself & put everything in it EXCEPT half & half/milk/anything. As long as I add cheddar cheese, I don't miss the half & half, but that's just me!

I agree...I always like to use half and half better because of the taste...but if I have to I'll use milk as a substitute.
